Presenting a one-night only collaboration with Meatsmith at SKAI, Swissôtel The Stamford, featuring prime Australian lamb presented by Meat and Livestock Australia (MLA).
Showcasing their respective forte, Executive Chef Paul Hallett from SKAI and MLA Lambassador and Head Chef Eddie Goh from Meatsmith co-present a 5-course dinner. The menu includes dishes such as cured scallop with roasted cauliflower grapefruit and scallop cracker; roasted lamb consommé with seaweed, daikon and confit lamb shoulder; buttermilk brine lamb taco with tomato chutney; herb brine lamb chop topped with walnut purée; and soft wattle seed cheesecake complemented by Cane Cut Viognier from Yarra Valley – a perfect pairing to end the evening.
