Chef Seumas, a Scotland native renowned for his innovative take on modern cuisine, brings a wealth of success to SKAI. Prior to joining the team, he led Restaurant ION to its first Michelin star within a mere six months – a testament to his culinary talent. A firm believer in hands-on learning, Chef Seumas fosters the same philosophy in his leadership style. Now, with his sights set on elevating SKAI to even greater heights, he plans to introduce his signature focus on fresh produce and meticulous technique, while weaving in more Japanese influences to create a truly unique SKAI experience.
